This dish is another quick fix as an appetizer. If you are feeling bloated, it should ease your bloat. It’s tangy and refreshing especially on a hot day.

Ingredients:
1 Japanese cucumber
1 tablespoon black vinegar
2 tablespoons light soya sauce
1 tablespoon plum sauce (optional)
2 teaspoons sugar
1 tablespoon white vinegar (optional if you prefer more sour)
1 tablespoon sesame oil
1 clove of white fungus
1 handful wolf berries (optional)
1 handful pine nuts (optional)

Preparation:
1. Soak white fungus in water to soften it, drain water and tear it into pieces.
2. Chop Japanese cucumber into pieces.
3. Mix Japanese cucumber with white fungus, soya sauce, sesame oil, vinegar and wolf berries.
Sprinkle pine nuts on top of the mixture and it’s ready to serve.
