This dish is adapted from a dish that my brother ate in China. The dish he had was just sliced pork with bittergourd and dried chili. We added salted egg but forgot about the dried chili. Will try adding dried chili next time.

200-300g pork loin, sliced into pieces
1 bittergourd
1 cooked salted egg
1 egg
1 tablespoon oyster sauce
1 tablespoon light soy sauce
1 teaspoon sesame oil
1 teaspoon corn flour
2-3 tablespoon cooking oil
2-3 cloves garlic, minced
1 bowl of water
A handful of dried chili

1. Cut bittergourd into pieces and mix with salt, set aside for 5 minutes, and pour water in to soak for 15-30min.
2. Marinate pork slices with oyster sauce, soy sauce, sesame oil, and coat with flour.
3. Heat up oil and stir fry minced garlic and dried chili until fragrant.
4. Add pork slices and continue stir frying until pink is gone.
4. Add bittergourd and continue stir frying until soft.
5. Mash salted egg in raw egg and stir, and add into the wok.
6. Continue stir frying for another 1-2 minutes, and it’s ready to serve.
