I was making steamed minced pork Cambodian style and had leftover cucumber that I decided to make full use of it by making it into pickled cucumber.

1 cucumber cut into stripes of wedges
1 1/2 teaspoons salt
4 teaspoons sugar
2 tablespoons rice vinegar
3 tablespoons sesame oil
1 teaspoon minced red chilli

Mix all of the ingredients together and it’s ready to serve. You can keep in fridge for a chilled and stronger vinegar taste, but be warned, it will be sour.
