Never thought that steamed pork loin (commonly known as 梅肉) would taste so delicious and appetizing. Found this recipe on steamed pork loin with belacan from a steam recipe book published by Seashore and we improvised the recipe by replacing belacan with XO sauce.

Ingredients:
1 palm-sized pork loin
1 1/2 tablespoon water
1 1/2 tablespoon starch
1 tablespoon chopped garlic
1 tablespoon chopped spring onion
1 tablespoon chopped ginger
2 teaspoon XO sauce
1 teaspoon sugar
1/2 teaspoon salt
1 tablespoon oil
2 tablespoons shaoxing wine

Preparation:
1. Wash and slice pork loin thinly
2. Soak pork loin in the mixture of water and starch for 10 minutes
3. After 10 minutes, pour away the bit of water on top of the pork loin
4. Add the remaining ingredients to pork loin and mix thoroughly
5. Lay pork loin on steaming plate, steam for 10 minutes and it’s ready to serve
